Few, if any, kitchens here have running water. No refrigeration. Plates and pans are washed well, but general sanitation isn't a big priority. Many things are prepared on chopping boards on the floor. But the results are usually edible and I haven't got any serious illness eating in Nepal.
The kitchen is often the only area with a fire, so it is a privilege to be able to sit in these kitchens and warm up while watching the cook.
